Let’s experiment this Friday in High Teas with Marie-Louise! It’s already the middle of January, but we know just how to distill summer in the easiest way possible - a simple Rosemary syrup, and the perfect ingredient to this week’s summer cocktail! 🌿 See all the deets below:
🍯 What you will need for the simple Rosemary syrup: 32g Rosemary (just the leaves) 125g sugar 125ml water 🍹 What you will need for the cocktail: 30ml Dry Gin of choice 30ml Leopard’s Leap Classic Chenin Blanc 30ml Fresh Rosemary syrup 30ml Fresh lemon juice 200ml #BarkerandQuin Club Soda
And how you’ve got to do it: 🍯 To make the Rosemary simple syrup - Combine the water, sugar, and rosemary leaves in a small saucepan. Bring to a boil, stirring until sugar dissolves, and then let simmer for 1 minute. Then, remove from the heat and let the syrup steep for about 45 minutes. Finally, pour the syrup into a glass jar through a mesh strainer to remove the rosemary leaves, and let cool. The syrup should be a light golden colour! 🍹 To make the cocktail - Fill glasses with ice and add gin, lemon juice and the Rosemary simple syrup. Stir this liquid before topping with the Club Soda. Garnish with a rosemary sprig and lemon wedge.
